Gluten Free Chicken Chili with White Beans, Sweet Potatoes and Lime

4 bone-in free-range organic chicken breasts
Drizzle of olive oil
Sea salt and pepper
2 tablespoons olive oil
1 medium red onion, peeled, diced
2-4 cloves fresh garlic, chopped
1 large or 2 smaller sweet potatoes, peeled, diced
2 teaspoons ground ginger
1 teaspoon cumin
1 teaspoon GF chili powder
2 teaspoons dried oregano
Hot red pepper flakes, season to taste
3/4 cup chopped roasted green chiles or tomatillo salsa verde
2 15-oz cans organic cannellini or Great Northern white beans, rinsed, drained
2 cups light organic chicken broth
Squeeze of fresh lime juice

For serving:

Fresh chopped parsley
Fresh chopped cilantro
Fresh lime slices

Instructions:

Preheat the oven to 375ºF. Rinse the chicken breasts and pat dry. Remove the skin, if you like (we do). Place meaty side up in a baking pan. Drizzle with olive oil and season with sea salt and pepper. Sprinkle with dried herbs, if you like (we used thyme and oregano).

Turn the chicken over, bone side up, drizzle again, and season.

Roast the chicken bone side up for roughly 30 to 35 minutes until done and no longer pink inside (check with a meat thermometer for an internal temp of 165º to 170º).

Tip: Roasting bone-in, with the rib side up, will give you moist, tender, juicy chicken.

In the meantime, start your pot of chili.

Heat two tablespoons of olive oil in a large soup pot over medium high heat. Add the red onion and stir for a minute. Add the garlic and sweet potatoes. Add ginger, cumin, oregano and hot pepper flakes. Stir to coat. Add in the roasted green chiles, white beans and chicken broth. Cover and bring to a light simmer.

When the chicken is done, let it cool off slightly, until it is cool enough to handle. Cut the meat off the rib bones, or tear off pieces by hand. Add the chicken pieces to the pot and stir gently to warm through.

Squeeze in some fresh lime juice to brighten flavors. Stir gently. Taste test for seasoning adjustments. Does it need more heat? More salt? If it has thickened too much, add a touch of broth to thin.

Serve with lime wedges and a sprinkle of fresh chopped parsley and cilantro.

Chicken Chili Verde

Serves - 5

8 oz. dry pinto beans (can use canned but as a $ saver we just use dry)
1 pound chicken (about 2 cups) chopped, cooked
1 (4oz)can chopped green chilies
1 tsp ground cumin
3/4 tsp dried oregano leaves
1/8 tsp ground cloves
1/8 tsp cayenne pepper
3 cups water
3 chicken bouillon cubes
 1 tsp minced garlic
2/3 cup finely chopped onion
1 cup grated low fat monterey jack cheese
1 dozen corn tortillas
1 jar salsa

Rinse pinto beans, soak them in cold water overnight, then drain them. Cut chicken into bite size pieces . Combine chicken with chilies and seasonings, refrigerate until needed. At the same time, combine beans, water, bouillon cubes, garlic, salt and onion in large pot; bring to a boil. Reduce heat and simmer until beans are soft, about 1 hour. Add more water if necessary.
Combine chicken and spices with beans;simmer 10 more minutes. Cool and freeze. (I usually put into freezer bags and lay flat on a cookie sheet until frozen then they are easier to stand on end to save room in freezer). Grate cheese, put in a 1 quart bag, and attach it to the freezer bag with the chili.
To serve: Thaw chili and cheese. Simmer chili 30 min, stirring occasionally. Top chili with salsa and grated cheese; serve on warmed corn tortillas.
Make this x4 and you will have 4 meals for the next month in your freezer when you are short on time!!

Onion Soup Mix

Make your own....onion soup mix!

I hate paying expensive prices for convenience mixes....and Onion Soup Mix is one I use frequently AND I had all of the ingredients on hand. Of course, I had to tweak it, just to make it my own! (because, as my mom says, I can't ever follow a recipe to the "T")

3 cups dried, minced onions

1 cup beef bullion

2 T. garlic powder

1 T. sugar

1 T. celery seed

Combine 2 cups of the minced onions and all other ingredients in blender and grind into a fine powder. Add the last cup of onions and 2 T. parsley flakes. Stir well and store in an air-tight container. Use 1/4 cup mix as a substitute for one pouch of store-bought.

White Bean Stew with Swiss Chard and Tomatoes




2 pound(s) Swiss chard, large stems discarded and leaves cut crosswise into 2-inch strips
1/4 cup(s) extra-virgin olive oil
3 clove(s) garlic, thinly sliced
1/4 teaspoon(s) crushed red pepper
1 cup(s) canned tomatoes, chopped
1 can(s) (16-ounce) cannellini beans, drained and rinsed
Salt

Directions
  1. Bring a saucepan of water to a boil. Add the chard and simmer over moderate heat until tender, 8 minutes. Drain the greens and gently press out excess water.
  2. In the saucepan, heat the oil. Add the garlic and crushed red pepper and cook over moderate heat until the garlic is golden, 1 minute. Add the tomatoes and bring to a boil. Add the beans and simmer over moderately high heat for 3 minutes. Add the chard and simmer over moderate heat until the flavors meld, 5 minutes. Season the stew with salt and serve.

Friendship Soup Mix


This is an easy and fun soup mix to make.  It's super yummy, too!  Make some jars and set aside, then if anyone you know is feeling sick, you can quickly cook up some delicious homemade soup for them. These jars of soup mix also make a great gift.  Fill a basket with the mix, some crackers, a soup spoon, and some rolls, and you've got a quick and heartwarming gift!



Friendship Soup Mix

Ingredients:
  • 1/2 cup dry split peas
  • 1/3 cup beef bouillon granules
  • 1/4 cup pearl barley
  • 1/2 cup dry lentils
  • 1/4 cup dried onion flakes
  • 2 teaspoons dried Italian seasoning
  • 1/2 cup uncooked long-grain white rice
  • 2 bay leaves
  • 1/2 cup uncooked pasta
 Directions:
    In a 1 1/2 pint jar, layer the split peas, bouillon, barley, lentils, onion flakes, Italian seasoning, rice, and bay leaves. Wrap the pasta in plastic wrap, and place in the jar. Seal tightly.   
    Attach a label to the jar with the following instructions: 
    Friendship Soup ADDITIONAL INGREDIENTS: 1 pound ground beef, black pepper to taste, garlic powder to taste, 1 (28 ounce) can diced tomatoes - undrained, 1 (6 ounce) can tomato paste, and 3 quarts water. TO PREPARE SOUP: Remove pasta from top of jar, and set aside. In a large pot over medium heat, brown beef with pepper and garlic; drain excess fat. Add diced tomatoes, tomato paste, water, and soup mix. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Stir in the pasta, cover, and simmer 15 to 20 minutes, or until the pasta, peas, lentils and barley are tender.

Just add Water Individual Mixes

Potato Soup Mix In A Mug
========================
1-3/4 cups instant mashed potatoes
1-1/2 cups dry milk
2 tablespoons instant chicken bullion
2 teaspoons dried minced onion
1 teaspoon dried parsley
1/4 teaspoon ground white pepper
1/4 teaspoon dried thyme
1/8 teaspoon turmeric
1-1/2 teaspoons seasoning salt
. Combine all & then divide by measuring 1/2 c. into each small ziploc
bag.
Place 1 mix in a Mug lined with Tissue paper & attach tag & small wire
whisk with ribbon.
Attach Tag:
Empty mix into mug and fill with boiling water, whisk, allow to set 3
minutes, enjoy.

Pasta Alfredo Mix In A Mug

1/3 cup angel hair pasta (broken into pieces)
2 tablespoons + 1 teaspoon Creamy Garlic Alfredo Sauce Mix
1 teaspoon dried parsley flakes
1/4 teaspoon Garlic & Herb Seasoning
Shake of pepper
. Measure into small Ziploc baggie, seal & shake to combine.
Place in a Mug lined with Tissue paper & attach tag & small wire whisk
with ribbon.
Attach Tag:
Empty Mix into mug, add 1 tsp margarine & 1 cup of boiling water, cook
for 3 minutes. Remove from heat and stir well.

Tortilla Soup Mix In A Mug

3 tablespoons crushed tortilla chips
2 tablespoons instant rice
1 tablespoon Lipton Vegetable Soup Mix
1 teaspoon chicken bouillon granules
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
1/8 teaspoon cumin
. Measure all ingredients into a small zip-top plastic bag. Shake to
combine. Tuck plastic bag into a microwavable mug. Attach a gift tag
with the following instructions:
Tortilla Soup: Empty contents of bag into mug. Add 1 cup water. Stir,
and microwave for 1 1/2 to 2 minutes. Stir again. Cover and let sit for
3 minutes. All ready to eat!

Baked Beans in a Mug
====================
1 tablespoon brown sugar
1 tablespoon Bacos (salad topping)
2 teaspoons Country Time lemonade powder (NOT sugar free)
1 teaspoon dried minced onion
1/2 teaspoon dry mustard
Measure all into small Ziploc baggie, seal & shake to combine.
Place the following into a Mug lined with tissue paper & top with bag of
seasonings above.
1 can baked beans or Pork N Beans
. Attach Tag:
Empty beans in to mug, stir in seasonings. Heat for 2-3 minutes,
stopping once or twice to stir.

Lunch In A Mug: Soup
====================
3/4 cup Non-fat dry milk powder
1/4 cup Non-dairy creamer
2 tablespoons Instant chicken bouillon
-granules
1 tablespoon Dried vegetable flakes
1/2 teaspoon Dried parsley flakes
1/2 teaspoon Dried summer savory
1/2 teaspoon Salt
1/4 teaspoon Onion powder
1/4 teaspoon Pepper
To serve: 2 Tbsp uncooked instant rice, optional, 3/4
cup water
. In small bowl, combine milk powder, creamer, bouillon granules,
vegetable flakes, parsley flakes, savory, salt, onion powder and
pepper. Store in airtight container for no longer than 6 months.
To make one serving of soup, place instant rice (Minute Rice) and 3
Tbsp dry soup mix in microwave safe mug. Place 3/4 cup water in 1 cup
measure and microwave on HIGH for 1 1/2 to 3 minutes or until it boils.
Pour boiling water into mug with rice and soup mix; stir. Cover with
plastic wrap and let stand for 5 minutes or until rice is tender.

Peach Cobbler Mix In A Mug

2 tablespoons sugar
2 tablespoons flour
1/4 teaspoon baking powder
Measure all into small Ziploc baggie, seal & shake to combine.
1 (4 ounce) container snack size peaches
. Place the peaches cup in a mug lined with tissue paper, add the cobbler
mix on to .
Attach Tag:
Melt 1 T. margarine in mug & melt, when done, add mix & 2 T. Milk,
whisk well. add peaches on batter and cook 2 more minutes.

Ambrosia Pudding Mix In A Mug

2 tablespoons banana cream instant pudding
4 vanilla wafers, broken into small pieces
2 tablespoons flaked coconut
2 teaspoons very finely chopped pecans
1/4 teaspoon cherry gelatin
. Measure all into small Ziploc baggie, seal & shake to combine.
1/4 cup mini marshmallows, measured into a small ziploc bag & sealed. 1
(4 oz) snack size pineapple tidbits
Place the pineapple cup in a mug lined with tissue paper, add the
ambrosia mix & marshmallow bag to the top.
Attach Tag:
Empty pineapples into your mug, add ambrosia mix, stirring well.
Place in fridge for 10 minutes to set, top with marshmallows, stir &
serve immediately.

Chocolate Fudge Mix In A Mug
============================
1/4 cup semi sweet chocolate chips
1/4 cup sugar
1 tablespoon finely chopped pecans or walnuts
Measure into small Ziploc baggie, seal & shake to combine
1/2 cup mini marshmallows : measured into a separate small baggie
. Place in a Mug lined with Tissue paper, attach pretty tag & tiny wooden
spoon.
Attach Tag:
Combine Fudge Mix, 2 1/2 T. Margarine & cook in microwave 3 minutes.
Remove & quickly stir in marshmallows, until well melted.
Cool 5-7 minutes and then place in fridge for 8-10 minutes to set.

Sweet Potato Chili

Sweet Potato Chili
2 Tbsp olive oil
2 cloves garlic, minced
1 Tbsp cumin
1 Tbsp chili powder
1 med onion, diced
¼ tsp cayenne
1 green pepper, diced
½ to 1 Habanero, minced (optional)
1 can diced tomatoes, low to no sodium
5 cups diced sweet potato (about 3 medium)
¼ tsp salt
1 can black beans, drained and rinsed
1 can kidney beans, drained and rinsed

Prepare vegetables.  When mincing the Habanero, wear latex gloves if you have them, or wash your hands with strong soap immediately after.  Once, I did not wash my hands thoroughly and soon after my hands started burning with intense pain.  I suffered for two days, and could only find relief by holding bags of frozen peas!  Well enough about me, heat your oil in a Dutch oven or heavy sauce pot over medium heat.  Add the onions and garlic and cook for about 10 minutes, stirring frequently until the onions sweet and start to brown. Add the spices and peppers.  Cook for about 5 minutes, stirring frequently.  Add the sweet potatoes, tomatoes and enough water to nearly the cover the potatoes.  Bring the pot to a boil.  Reduce the heat and simmer the chili until the sweet potato begins to soften.

Add the beans and continue to simmer until the potatoes are tender and the chili is thick.
